Chicken Stock Ingredients

  • 1 free-range chicken, 3 to 4 pounds
  • 1 yellow onion, halved
  • 1 carrot, roughly chopped2 celery stalks, roughly chopped
  • 1 bay leaf
  • 1 flat-leaf parsley stem
  • 1 thyme sprig
  • 1 garlic clove
  • 5 black peppercorns

Makes 6 quarts

How to make Chicken Stock ?

Put the chicken in a large pot, and add 8 quarts water and all the other ingredients. Bring to a boil over high heat. Reduce the heat to medium-low and let the stock simmer for 2 hours, skimming the surface with a spoon every once in a while to remove the foam that forms on top.

Strain the stock into containers, and discard the solid ingredients. We like using ours fresh, but you can freeze it if necessary.
